  • Maintain room temperature below 10C.
  • Maintain room under a positive pressure in relation to adjacent areas.
  • Eliminate condensation formation.
  • Eliminate standing water in ventilation and refrigeration equipment.

& Implementation

  • Removal of hanging evaporator coils and associated piping from the space.
  • Install rooftop air handling units (AHU) to maintain room temperature and pressurization.
  • Specify AHU’s to meet food grade requirements.
  • Specify AHU’s to meet sanitation requirements.
  • Install exhaust fans to remove moisture during sanitation.
  • Distribution ductwork kept to a minimum and sloped to eliminate standing water. 
  • Materials and construction methods suitable for food processing, inspection, and cleaning.

A new and effective approach to maintaining room environmental requirements was developed. The approach reduced humidity and standing water sufficiently to stop positive listeria analyses.
